Making your own homemade pizza dough is easier than you think, and it gives your pizza that rustic, from-scratch taste that everyone will love. The chewy crust, melty cheese, and savory shiitakes come together for a pizza night you’ll want to make again and again.

Ingredients

For the Dough:

  • 1 ½ cups warm water

  • 2 tablespoons yeast

  • 2 tablespoons sugar

  • 3 cups flour (all-purpose, or half all-purpose and half whole wheat for a healthier crust)

For the Pizza:

  • Cornmeal (optional, for dusting the pan)

  • 1 cup pizza sauce (homemade or store-bought)

  • 2 cups shredded mozzarella cheese or pizza blend cheese

  • 4-8 oz. of sliced shiitake mushrooms (fresh or rehydrated from dried)

  • Optional extra toppings: onions, peppers, spinach, or fresh herbs

Directions

  1. Preheat your oven to 425°F.

  2. In a large bowl, combine warm water, yeast, and sugar. Allow the mixture to sit for about 10 minutes, until the yeast becomes bubbly and activated.

  3. Add flour to the yeast mixture and knead until the dough is shaggy but comes together smoothly.

  4. Spray a 12" x 17" baking pan with non-stick spray. Optionally, lightly dust the pan with cornmeal for extra flavor and crunch.

  5. Press the dough evenly into the pan.

  6. Spread a layer of pizza sauce over the dough, followed by shredded mozzarella.

  7. Add sliced shiitake mushrooms and any additional toppings you enjoy. (If using dehydrated mushrooms, be sure to reconstitute them with warm water)

  8. Bake for 20–25 minutes, or until the cheese is melted and golden brown.

  9. Let the pizza cool for a few minutes before slicing and serving.
