Elderberry Muffins

Topping Ingredients

1/2 cup Sugar
1/3 cup Flour
1/4 Cup butter room temperature
1 tsp cinnamon

Muffin Ingredients

2 cups of all-purpose flour
2 tsp. baking powder
1/2 tsp Salt
1/2 cup of Butter
1 cup Sugar
2 Eggs
1/2 cup of Milk
1 tsp. Vanilla
1 cup of elderberries (fresh or frozen, thawed)


Pre-heat oven to 375 F

Topping: Place dry ingredients in small bowl and cut in butter with a fork to a crumble consistency. Set aside.

Muffins: Add butter and sugar to mixer and blend until creamy. Add eggs one at a time then milk and vanilla. Mix muffin dry ingredients in a separate bowl and to wet ingredients (half at a time). Fold in elderberries Spoon muffin mix into lined muffin pan. Fill each 2/3 full and then top with crumble topping. Cook for about 20 minutes or until toothpick comes out clean.
