Ingredients
- 2 1/4 cups all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2/3 cup sugar
- 1 tablespoon lavender buds
- Zest of one lemon
- 1/2 cup soft butter
- 1 egg room temperature
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
Directions
- Whisk together flour, baking soda, and salt. Set aside.
- In separate bowl, blend sugar, lavender buds, and lemon zest. Using the back of a spoon pressing together until fragrant. Add butter and beat until light and fluffy. Add the egg, lemon juice, and vanilla extract. Mix to incorporate.
- In two batches, incorporate the flour mixture until dough forms.
- Turn onto well floured surface . Knead and roll into log (or divide into two logs). Wrap in wax paper or plastic wrap. Refrigerate at least two hours.
- Cut into circles of desired thickness. Bake at 350 degrees for 10-12 minutes until lightly brown.
