Lavender Lemon Cookies

  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup sugar
  • 1 tablespoon lavender buds
  • Zest of one lemon
  • 1/2 cup soft butter
  • 1 egg room temperature
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract


  1. Whisk together flour, baking soda, and salt. Set aside.

  2. In separate bowl, blend sugar, lavender buds, and lemon zest. Using the back of a spoon pressing together until fragrant. Add butter and beat until light and fluffy. Add the egg, lemon juice, and vanilla extract. Mix to incorporate.

  3. In two batches, incorporate the flour mixture until dough forms.

  4. Turn onto well floured surface . Knead and roll into log (or divide into two logs). Wrap in wax paper or plastic wrap. Refrigerate at least two hours.

  5. Cut into circles of desired thickness. Bake at 350 degrees for 10-12 minutes until lightly brown.
